Welcome to the Table

June has now come to an end, but since we just started this blog a little late, we wanted to express our love to all the Kirksville community members. We will always provide an open seat and be here to break bread with those who have fought for their place at the table.

In honor to celebrate, even though it may be July, I wanted to share some of my favorite quick recipes, but to support our friends, we must look past color and save the rainbow for others.

 

Ingredients

  • Bread (I found some wonderful cheesy bread at the market that I love for this)

  • 1 small tomato diced

  • Drizzle of olive oil

  • Drizzle of Balsamic vinaigrette

  • Seasonings to taste: Rosemary, Salt, Pepper, Thyme, Oregano, Basil

  • Grated cheese of choice (I like mozzarella




Directions:

  1. Slice your bread in slices and put in toaster until desired temperature

  2. Toss tomatoes pieces with olive oil and seasonings

  3. Place mixture on top of of bread and drizzle with balsamic and grated cheese



 

Ingredients:

  • 2-12 Asparagus Stalks

  • 1-4 Tomatoes

  • Fresh Basil or any fresh herb you have

  • Mozzarella or Any Cheese you Have, Sliced

  • Date Lady Balsamic Vinegar or Any Balsamic will do (I love glaze)

  • Olive Oil, Extra Virgin

  • Sea Salt to Taste


Directions:

  1. Peel or snap off the bottom halves of asparagus so they are not woody tasting

  2. Slice tomatoes and fresh basil

  3. Generously add extra virgin olive oil to asparagus. Add salt and pepper

  4. Throw on the grill or saute in a pan over med-high heat. Cook for 2 minutes, turn and cook 2 minutes, then remove.

  5. Top with tomatoes and cheese and drizzle balsamic

 

So, if you can't tell, I love tomatoes and balsamic vinegar! However, all of these ingredients can be found in local stores and farmer's markets. Not to mention they make for quick, healthy meals. I hope you enjoy these recipes and, once again, sending all the love in the world to our community members!
